Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs offering a buttery crunch
  • 0.25 cups unsalted butter, melted binding the crust together
  • 1 tbsp sugar adding just the right hint of sweetness
  • 0.25 cups pistachios, finely chopped bringing a nutty twist

For the cheesecake filling

  • 2 cups cream cheese, softened the creamy base of the cheesecake

For the cherry topping

  • 2 cups fresh cherries, pitted and halved providing sweetness

  • 0.5 tbsp cornstarch to thicken the topping

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a large mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and finely chopped pistachios. Mix until all is well combined.
  • Press the mixture into the bottom of a 9-inch springform pan to create a solid crust. Bake for 10 minutes until slightly golden, then remove from the oven and set aside to cool.
  • In another large mixing bowl, beat the softened cream cheese, sour cream, and sugar together until smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, lime juice, lemon zest, and lime zest until fully combined.

Baking

  • Pour the cheesecake batter over the cooled crust in the springform pan. Smooth the top evenly.
  • Bake in the preheated oven for 55-60 minutes, until the edges are set but the center is still slightly jiggly.
  • Turn off the oven and allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour.
  • Refrigerate the cheesecake for at least 4 hours or overnight to set completely.

Cherry Topping

  • In a saucepan over medium heat, combine the fresh cherries, sugar, and lemon juice. Cook, stirring occasionally, until the cherries release their juices, about 5-7 minutes.
  • In a small bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry. Add this mix to the cherry mixture, stirring until it thickens, about 2 minutes. Remove from heat and let cool.

Assembly

  • Once the cheesecake is chilled and firm, spread the cherry topping over the top before serving. Garnish with additional chopped pistachios if desired.

Notes

To elevate your cheesecake, ensure cream cheese is softened properly, use roasted pistachios for more flavor, and serve with whipped cream for a delightful contrast.
