Ingredients
  

For the Crust

  • 1.5 cups crushed pistachios lending a nutty foundation
  • 0.25 cups granulated sugar to sweeten the crust
  • 0.25 cups unsalted butter, melted for richness

For the Cheesecake Filling

  • 3 packages (8 oz each) cream cheese, softened for a creamy filling
  • 1 cups granulated sugar to balance the tartness
  • 0.25 cups sour cream for extra creaminess
  • 3 large eggs essential for structure
  • 2 tbsp lemon juice for a zesty kick
  • 1 tbsp lime juice to enhance the citrus explosion
  • 1 tsp vanilla extract for depth of flavor
  • 0.5 cups heavy cream for a luscious texture

For the Cherry Topping

  • 1 cups fresh cherries, pitted and halved providing a juicy topping
  • 1 tbsp lemon juice to create the cherry sauce
  • 1 tbsp lime juice to create the cherry sauce
  • 2 tbsp honey to sweeten the cherry mixture
  • 0.25 cups chopped pistachios for a beautiful garnish

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • For the crust: In a food processor, combine the crushed pistachios, sugar, and melted butter. Pulse until well combined. Press into a 9-inch springform pan. Bake for 10 minutes and let it cool.
  • For the cheesecake filling: In a large bowl, beat cream cheese and sugar until smooth. Gradually add sour cream, lemon juice, lime juice, and vanilla. Incorporate eggs one at a time. Pour into the cooled crust and smooth the top. Bake for 50-60 minutes, until edges are set and center jiggles slightly. Turn off the oven, allow cheesecake to cool within for 1 hour, then refrigerate for at least 4 hours.
  • For the topping: In a small saucepan, combine cherries, lemon juice, lime juice, and honey. Cook for 5-7 minutes, stirring gently. Allow to cool to room temperature.
  • Once chilled, pour the cherry topping over cheesecake and sprinkle with chopped pistachios. Slice, serve, and enjoy chilled!

Notes

Make sure your cream cheese is well softened before mixing to prevent lumps. Optionally add orange zest for extra flavor. Don't overbake; it should jiggle slightly in the center. Slow cooling prevents cracking.
