Preparation

  • Preheat your oven to 325°F (165°C).
  • In a mixing bowl, combine the crushed graham crackers and melted butter until the mixture resembles wet sand.
  • Press this mixture firmly into the bottom of a springform pan to form a solid, crumbly base.
  • Place it in the oven and bake for 8-10 minutes, then set the crust aside to cool.

Making the Filling

  • In a large bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.
  • Gradually add in the heavy cream, powdered sugar, rose water, finely ground pistachios, and vanilla extract, mixing until perfectly blended.
  • Pour the pistachio rose mixture into the cooled crust and gently smooth the top with a spatula.

Baking and Cooling

  • Bake in the oven for about 45-50 minutes, watching until the center is set but still slightly jiggly.
  • Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours or overnight.
  • Before serving, top the cheesecake with chopped pistachios and optional rose petals.
