Instructions
 

Dough

  • In a large mixing bowl, whisk together the all-purpose flour, salt, and baking powder until well combined.
  • Gradually pour in the warm water and olive oil. Stir with a wooden spoon or spatula until the mixture begins to come together.
  • Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
  • Cover the dough with a clean cloth or plastic wrap and let it rest for 30 minutes.

Filling

  • In a medium-sized bowl, combine the crumbled feta cheese, chopped mint, and lemon zest. Mix well.

Assemble

  • Once the dough has rested, divide it into small balls—about the size of a golf ball.
  • Lightly flour your surface and roll each ball out into a thin circle, about 6 inches in diameter.
  • Place a spoonful of the feta and mint mixture in the center of each dough circle, fold the dough over to create a half-moon shape, and carefully pinch the edges together to seal.

Cook

  • Preheat a non-stick skillet over medium-high heat and brush with a little olive oil.
  • Place the stuffed flatbreads in the skillet, cooking for 2-3 minutes on each side until golden brown and crispy.

Serve

  • Remove from the skillet, garnish with fresh parsley, and serve warm.

Notes

For extra flavor, consider adding a touch of garlic or a pinch of chili flakes to the feta mixture. Leftovers can be reheated in a skillet for a few minutes to regain the crisp texture.
