  • 1/2 unit red onion, finely chopped Sweet and slightly sharp, provides lovely texture.
  • 1 8.5-oz jar sun-dried tomatoes, drained and chopped Bursting with concentrated, tangy sweetness.
  • 5 ounces baby spinach Fresh and vibrant, it wilts beautifully into the dish.
  • 6 ounces feta cheese crumbles Creamy and tangy, a perfect partner for salmon.
  • 1/3 cup pesto sauce (optional) Adds herby richness without overwhelming the dish.

Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit.
  • Place the salmon filet on a parchment-lined baking sheet.
  • Drizzle the salmon with avocado oil, using a brush to evenly coat it.
  • Season the salmon with sea salt and garlic powder.

Cooking

  • Bake in the center of the oven for 10 minutes.
  • While the salmon bakes, heat a skillet with a bit more avocado oil over medium heat.
  • Add the chopped red onion and sauté until soft, about 5-8 minutes.
  • Incorporate the sun-dried tomatoes and spinach into the skillet, cover, and cook until the spinach wilts.
  • Mix in the feta cheese and heat until it’s slightly melted.
  • Remove the salmon from the oven, then evenly top it with the spinach mixture.
  • Return the salmon to the oven and bake for another 8-10 minutes.
  • Drizzle with pesto sauce if using, and allow to rest for a few minutes before serving.

Notes

For the best flavor, use high-quality, fresh ingredients. If you're short on time, you can also use frozen salmon, just ensure to thaw it completely before cooking. Consider adding capers or olives to the spinach mixture for extra flavor.
