Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and sauté until softened and fragrant, about 3-5 minutes.
  • Add the ground beef or chicken, cooking until browned.
  • Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and corn. Allow to simmer for 5-7 minutes.

Assembly and Baking

  • Grease a baking dish and layer the beef mixture evenly at the bottom.
  • Sprinkle the crushed tortilla chips over the meat mixture.
  • Crown the casserole with the shredded cheddar and Monterey Jack cheeses.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Finish with a dollop of sour cream and a sprinkle of chopped green onions.

Notes

Consider adding jalapeños for a kick or bell peppers for added sweetness. You can prepare the beef mixture in advance and store it in the refrigerator until you're ready to assemble and bake the casserole.
