Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • Line a muffin tin with cupcake liners.

Making the crust

  • Spoon about 1 tablespoon of the mixture into each muffin cup and press down firmly to form a sturdy crust.

Making the cheesecake filling

  • In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract and sour cream until just combined.
  • In a separate bowl, whisk together the banana pudding mix and milk until it thickens.
  • Fold this mixture gently into the cream cheese mixture.

Baking

  • Spoon the combined batter into the prepared muffin cups, filling each about three-quarters full.
  • Bake for 20-25 minutes, until set in the center and lightly browned on top.
