Preparation

  • Preheat the oven to 325°F (160°C) and line a muffin tin with colorful paper liners.
  • In a medium bowl, mix 1 cup of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter until the mixture resembles wet sand.
  • Press approximately 1 tablespoon of this mixture into each muffin liner to create a firm layer.
  • In a large bowl, beat 16 ounces of softened cream cheese until smooth.
  • Gradually add in 1 cup of powdered sugar, mixing until fully incorporated.
  • Stir in 1 tablespoon of vanilla extract and 2 tablespoons of cooled espresso.
  • Gently fold in 2 large eggs until just combined.

Baking

  • Pour the cheesecake batter over the crusts, filling each muffin liner about 3/4 full.
  • Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the centers are set.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Chill in the refrigerator for at least 2 hours before serving.

Topping

  • Before serving, top each mini cheesecake with whipped cream and sprinkle with chocolate shavings.

Notes
