Ingredients
  

Crust

  • 1.5 cups chocolate cookie crumbs Dark and aromatic
  • 0.25 cups melted butter Warm and inviting

Filling

  • 3 cups softened cream cheese Creamy and decadent
  • 1 cups granulated sugar Sweet and sparkly
  • 3 large eggs Bringing structure
  • 1 cups sour cream Tangy and velvety
  • 2 teaspoons peppermint extract Fragrant and refreshing

Ganache

  • 0.5 cups heavy cream Luscious and silky
  • 8 oz semisweet chocolate Chopped into bits

Toppings

  • 0.5 cups chopped mint chocolate candies For added crunch

Instructions
 

Preparation

  • Preheat the oven to 325°F (165°C) and lightly grease a 9-inch springform pan.
  • In a medium bowl, combine the chocolate cookie crumbs with melted butter and press the mixture into the bottom of the prepared pan.
  • Bake for about 10 minutes, then let it cool.

Filling

  • In a large bowl, beat together the softened cream cheese and granulated sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the sour cream and peppermint extract.
  • Pour the cream cheese mixture over the cooled crust and spread evenly.
  • Bake for 50-60 minutes until the edges are set and the center has a slight jiggle.
  • Turn off the oven and allow the cheesecake to cool inside with the door slightly ajar.

Ganache

  • In a saucepan over medium heat, bring the heavy cream to a simmer.
  • Remove from heat, add the chopped semisweet chocolate, and stir until melted into a silky mixture.
  • Let it cool for about 10 minutes before pouring over the cheesecake.

Cooling & Chilling

  • Top the cheesecake with chopped mint chocolate candies, cover, and chill in the fridge for at least 4 hours or overnight.

Notes

Ensure the cheesecake cools slowly in the oven to prevent cracks. Patience is key for achieving light and creamy texture.
