  • Press the crumb mixture firmly into the bottom of mini tart pans or muffin tins to form a sturdy crust. Set them aside.
  • In a separate bowl, whisk together the banana cream pudding mix and cold milk for about 2 minutes until the mix thickens.
  • In another bowl, beat the heavy cream with the powdered sugar and vanilla extract until stiff peaks form for a fluffy topping.
  • Gently fold the whipped cream into the banana pudding mixture to maintain a fluffy texture.
  • Fill the prepared crusts with the banana cream filling, filling each to the brim.
  • Arrange banana slices on top of the filling and add a dollop of whipped cream.
  • Drizzle honey over the top.
  • Cover and refrigerate the mini pies for at least 2 hours until they are set perfectly.

Notes
