  • 8 oz spaghetti (regular or whole wheat)
  • 2 tbsp olive oil Adds richness and depth.

  • 1 can (14.5 oz) diced tomatoes Forms the base of the sauce.
  • 2 tsp dried Italian herbs (basil, oregano, thyme) Enhances flavor.

  • for garnish Fresh basil leaves Adds freshness.

Preparation

  • In a large pot over medium heat, add olive oil and sauté the minced garlic until fragrant.
  • Pour in the canned diced tomatoes with their juices; stir to blend them with the garlic.
  • Sprinkle in the dried Italian herbs, salt, and pepper.
  • If desired, break spaghetti in half and add it to the pot, followed by enough water or broth to cover.
  • Bring to a boil, then reduce the heat and let it simmer for about 10 minutes, until the pasta is tender.
  • Remove from heat and serve hot, garnishing with fresh basil leaves.

Notes

Store leftovers in an airtight container for up to 3 days. For longer storage, freeze portions and thaw in the fridge overnight.
