For the Fish

  • 1 1/2 pounds fresh cod The star of the show, flaky white fish.
  • 3 tablespoons salted butter Adds a luscious richness (optional: use up to 5 tablespoons for extra butter sauce).

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and grease a rimmed baking sheet with cooking spray.
  • Mix the grated Parmesan cheese, garlic powder, and paprika on a dinner plate. Zest half of the lemon into this mixture. Add the chopped parsley and blend well.
  • Rinse cod under cold water, check for any bones, and pat dry with paper towels.
  • Melt the butter in a small pan or in the microwave and let it cool slightly.

Coating the Cod

  • Set up your coating station with fish, melted butter, cheese mixture, and baking sheet in order.
  • Dip each piece of cod into the melted butter, coating both sides, then dredge in the cheese mixture.

Baking

  • Place the coated fish on the prepared baking sheet. Drizzle remaining melted butter over the cod.
  • Bake for about 15 minutes or until the fish flakes easily with a fork and the cheese turns golden brown.

Serving

  • Squeeze fresh lemon juice over the baked cod before serving.
  • Serve with a side of crusty bread, rice, mashed potatoes, or polenta.

Notes

For an extra crispy topping, broil the cod for the last few minutes of cooking. Consider using dried herbs like thyme or oregano for extra flavor. You can also substitute different types of flaky white fish like haddock or tilapia.
