Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press it into the bottom of the prepared pan.
  • Place the crust in the oven for 10 minutes to set. Remove and let it cool while you prepare the filling.

Cheesecake Filling

  • In a large bowl, beat the softened cream cheese with sugar until smooth and creamy.
  • Add the eggs one at a time, ensuring each is well integrated before adding the next. Stir in vanilla extract.
  • Pour the cheesecake batter over the baked crust, spreading evenly. Bake for 30-35 minutes or until set. Cool completely.

Peach Topping

  • In a medium bowl, mix sliced peaches, brown sugar, flour, cinnamon, nutmeg, vanilla extract, and lemon juice. Stir until coated.
  • Sprinkle cubed butter over the peach mixture and spread over the cooled cheesecake layer. Bake for an additional 25-30 minutes, or until golden and bubbly.

Cooling

  • Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours before serving.

Notes
