  • 1 cup granulated sugar
  • 1 egg for binding
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup jelly or jam any flavor you prefer

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the creamy peanut butter, granulated sugar, egg, vanilla extract, and salt. Stir well until the mixture is smooth.
  • Roll the dough into small balls, about 1 inch in size, and place them on a baking sheet lined with parchment paper.
  • Using a fork, gently press down each ball to create a criss-cross pattern on the top.
  • Add a small dollop of your favorite jelly in the center of each cookie.

Baking

  • Bake for 8-10 minutes, or until the cookies are lightly golden around the edges.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, consider adding a pinch of cinnamon or chocolate chips. To store, place in an airtight container for up to a week, or freeze for up to three months.
