Preparation

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted unsalted butter. Press firmly into the bottom of a 9-inch springform pan to form a solid crust.
  • Bake the crust in the preheated oven for 10 minutes, then let it cool completely.

Cheesecake Filling

  • In a large mixing bowl, beat together cream cheese and sour cream until smooth.
  • Add granulated sugar, vanilla extract, and lemon juice. Mix until fully incorporated.
  • Add eggs one at a time, mixing well after each addition.
  • Pour the cheesecake mixture over the cooled crust. Tap the pan gently to release air bubbles.
  • Bake in the oven for 50-60 minutes until the cheesecake is set but slightly jiggly in the center.

Cooling & Topping

  • Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours or overnight.
  • Prepare the cherry topping by combining cherries and cherry juice in a bowl. Let it sit for 10 minutes.
  • Whip together heavy whipping cream and powdered sugar until stiff peaks form.
