  • 1 box yellow cake mix light and fluffy
  • 3 large eggs fresh and room temperature
  • 1/2 cup vegetable oil for moisture
  • 1 can (20 oz) crushed pineapple, undrained sweet and juicy

Frosting Ingredients

  • 1 package (8 oz) cream cheese, softened rich and creamy
  • 1 cup powdered sugar sweet and smooth
  • 1 container (8 oz) whipped topping e.g., Cool Whip, light and airy

Topping Ingredients

  • 1 can (15 oz) crushed pineapple, well-drained extra pineapple goodness
  • 1/2 cup sweetened shredded coconut optional but adds texture and flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9x13-inch baking dish.
  • In a large mixing bowl, combine the yellow cake mix, three large eggs, 1/2 cup of vegetable oil, and the undrained crushed pineapple. Mix until smooth.
  • Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
  • Allow the cake to cool completely.

Frosting

  • In a bowl, beat the softened cream cheese and powdered sugar together until smooth, then fold in the whipped topping.
  • Spread the cream cheese frosting evenly over the cooled cake.
  • Sprinkle the well-drained crushed pineapple over the icing and optionally add shredded coconut.

Chilling

  • Refrigerate the cake for at least two hours before serving.

Notes

For extra flavor, add lime or lemon zest. You can also experiment with different fruits or nuts to enhance the cake.
