Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour for that classic bread base.
  • 1 teaspoon baking soda the leavening agent that gives our bread lift.
  • 1 teaspoon salt to enhance the flavors of our ingredients.

Wet Ingredients

  • 3 ounces cream cheese, softened for a rich, creamy texture.
  • 1 cup granulated sugar to add sweetness and depth.
  • 3 teaspoons vanilla extract to infuse warmth and aroma.
  • 1 large egg, beaten to bind our ingredients together.
  • 1/2 cup sour cream adding moistness and tanginess.
  • 1 can (20 ounces) crushed pineapple, drained bringing a tropical flair (reserve 2-3 tablespoons of juice for the glaze).

Glaze

  • 1 1/2 cups powdered sugar for the glaze.
  • 2-3 tablespoons reserved pineapple juice to create a sweet finish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×5-inch loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
  • In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  • Add in the beaten egg, sour cream, and drained crushed pineapple, mixing until fully combined.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.

Baking

  • Pour the batter into the greased loaf pan and smooth the top with a spatula.
  • Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  • While the bread is baking, whisk together the powdered sugar and reserved pineapple juice for the glaze.
  • After the bread has cooled for 10 minutes, drizzle the glaze over the top. Allow to cool completely before slicing.

Notes

For an added burst of flavor, consider folding in chopped nuts or shredded coconut into the batter. Ensure cream cheese is at room temperature for a smoother batter. For a more pronounced pineapple flavor, use fresh pineapple instead of canned, finely chopped. A pinch of cinnamon can also enhance the sweet flavor.
