Preparation

  • Preheat your oven to 350°F (175°C). Prepare two 8-inch round cake pans by greasing and dusting them with flour.
  • In a medium bowl, whisk together your flour, baking powder, and salt.

Cake Mixing

  • In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3 minutes.
  • Add the eggs one by one, beating well after each addition.
  • Stir in the vanilla extract and pink dragon fruit puree.
  • Gradually add the dry mixture to the wet ingredients, alternating with the milk.
  • Mix until just combined.

Baking

  • Evenly distribute the batter into the prepared pans, smoothing the tops with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool for 10 minutes in the pans before transferring to a wire rack to cool completely.

  • Beat softened butter until smooth and creamy.
  • Gradually add powdered sugar, one cup at a time, mixing well after each addition.
  • Stir in vanilla extract, heavy cream, and pink dragon fruit puree until smooth.
  • Add food coloring if desired for a bolder pink.

Assembly

  • Once the cakes are fully cooled, spread a layer of frosting on the top of one cake layer.
  • Gently place the second layer on top and frost the entire cake.
  • Top with edible flowers if desired.
