Preparation

  • In a blender, combine the pineapple juice, coconut cream, rainbow sherbet, and crushed ice in this order for the best blending results.
  • Blend on high until smooth and creamy, ensuring no chunks of sherbet remain.
  • If desired, add in a shot of white rum and blend for a few more seconds.
  • Pour the mixture into chilled glasses to keep them refreshingly cool.
  • Garnish with a slice of fresh pineapple and a maraschino cherry.
  • Drizzle grenadine or fruit syrup over the top for vibrant color.

Notes

For an elevated experience, chill your glasses in the freezer. Experiment with different flavors of sherbet or use coconut-flavored non-dairy yogurt for a non-dairy version. Omit the rum for a family-friendly treat.
