  • 1 sheet refrigerated pie crust (or 6 mini tart shells)

Filling and Topping

  • 1 cup fresh raspberries bursting with flavor
  • 1/4 cup raspberry jam sweet and tangy
  • 1 tsp lemon juice for that zesty kick
  • 1/2 cup mascarpone or cream cheese creamy goodness
  • 2 tbsp powdered sugar adding just the right sweetness
  • 1/2 tsp vanilla extract for the fragrant aroma
  • to taste optional Fresh mint leaves for garnish, adding a touch of elegance

Preparation

  • Press the pie crust into tart pans, ensuring a snug fit. Use a fork to prick the bottoms to prevent bubbling during baking.
  • Bake at 375°F (190°C) for 10–12 minutes or until the crusts are golden and fragrant. Once done, allow them to cool completely.
  • In a mixing bowl, whip together the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • In another bowl, gently mash half of the fresh raspberries, blending them with the raspberry jam and lemon juice until mixed.
  • Spread the mascarpone mixture evenly into the cooled tart shells, creating a luscious base.
  • Top with the raspberry mixture and arrange the whole raspberries on top for a beautiful presentation.
  • Garnish with fresh mint leaves, if desired, and chill your tarts in the refrigerator until you’re ready to serve.

Notes

For a more pronounced berry flavor, increase the amount of raspberry jam or add a layer of fresh raspberry purée before topping. Consider using store-bought mini tart shells for convenience.
