Ingredients
  

For the crust

  • 1 cup graham cracker crumbs Provides a crispy, golden crust.

For the cheesecake filling

  • 16 ounces cream cheese Softened, for a velvety filling.
  • 1 cup granulated sugar Balances the tanginess of the cream cheese.
  • 1 teaspoon vanilla extract Infuses the filling with flavor.
  • 3 large eggs Binds the ingredients together.
  • 1/2 cup sour cream Adds tang and richness.

For the raspberry swirl

  • 1 cup fresh raspberries Provides tartness and color.
  • 2 tablespoons raspberry jam Enhances the raspberry flavor.

Preparation

  • Preheat the oven to 325°F (165°C) and line a 9x9-inch baking pan with parchment paper.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix thoroughly, then press into the bottom of the prepared pan.
  • Bake for 8-10 minutes until lightly golden and let cool completely.

Cheesecake Filling

  • In a large bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar and vanilla extract, blending until well combined.
  • Incorporate eggs one at a time, beating thoroughly after each addition, then stir in sour cream until smooth.

Raspberry Mixture

  • Mash fresh raspberries in a separate bowl, then stir in raspberry jam until combined.

Assembly and Baking

  • Pour cheesecake filling over cooled crust. Drop dollops of raspberry mixture on top and swirl through gently with a toothpick.
  • Bake for 45-50 minutes or until edges are set with a slight jiggle in the center. Cool at room temperature for 30 minutes, then refrigerate for at least 4 hours to fully set.
  • Once chilled, cut into bars and serve.

Notes

For best results, use room temperature cream cheese and don't overmix the raspberry swirl for a beautiful effect. Adding lemon zest to the filling enhances the flavor.
