  • 20 oz refrigerated four cheese ravioli Bursting with flavor
  • 1 lb thin asparagus Tender and crisp, woody ends trimmed, chopped into bite-sized pieces
  • 10.5 oz pkg grape tomatoes Halved for sweetness
  • 3 cloves garlic Minced to unleash robust flavor

Sauce and Seasoning

  • 2 Tbsp olive oil Golden and fragrant

Instructions
 

Cooking the Ravioli

  • Begin by bringing a large pot of salted water to a boil.
  • Once boiling, add the refrigerated four cheese ravioli and cook according to the package instructions until tender but maintaining a bite.

Preparing the Vegetables

  • While the pasta cooks, heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  • Add the chopped asparagus to the skillet and sauté for about 4 minutes until bright green and tender yet still crunchy.
  • Next, introduce the halved grape tomatoes and minced garlic to the skillet and sauté for an additional minute.
  • Toss in the balsamic vinegar.

Combining Ingredients

  • Once the ravioli has finished cooking, carefully drain the water and transfer the pasta into a large serving bowl.
  • Combine the sautéed asparagus mixture with the ravioli in the bowl.
  • Add the toasted walnuts, minced basil, and parsley. Season generously with salt and pepper, then gently toss everything together until well mixed.

Serving

  • Finally, sprinkle the shredded parmesan cheese over the top and serve warm.

Notes

Consider adding red pepper flakes for heat or lemon juice to brighten. You can add cooked chicken or shrimp for a heartier dish. Toast walnuts before adding them for enhanced flavor.
