For the Red Snapper

  • 4 pieces red snapper fillets Glistening and fresh
  • 2 tbsp olive oil Rich and fruity
  • 1/2 cup onion, chopped Releasing its sweet aroma
  • 1 piece bell pepper, chopped Adding a colorful crunch
  • 2 cloves garlic, minced Vibrant and pungent
  • 1 can (14 oz) diced tomatoes Juicy and tangy
  • 1/2 cup heavy cream Decadent and velvety
  • 1 tbsp Creole seasoning Aromatic and lively
  • 1 tsp paprika Bringing a touch of warmth
  • 1/2 tsp thyme Herbaceous and fragrant
  • to taste Salt and pepper Essential seasonings
  • to taste Fresh parsley, chopped For aromatic garnish

Instructions
 

Cooking the Fish

  • Heat 2 tablespoons of olive oil in a spacious skillet over medium heat.
  • Season the red snapper fillets generously with salt, pepper, and a dusting of paprika.
  • Cook the fillets for about 4-5 minutes on each side until a beautiful golden crust forms and the insides remain tender and flaky.
  • Remove the fillets from the skillet and set aside.

Creating the Sauce

  • In the same skillet, add the onion, bell pepper, and garlic without wiping it clean.
  • Sauté for about 3-4 minutes until the onion is translucent and the pepper softens.
  • Add the diced tomatoes, Creole seasoning, thyme, and additional salt and pepper.
  • Let the mixture simmer for about 5 minutes to deepen the flavors.
  • Pour in the heavy cream and stir gently to create a luscious creamy sauce.
  • Allow it to simmer for another 3-5 minutes until thickened.
  • Return the red snapper fillets to the skillet, spooning the sauce over each one.
  • Warm the fillets through for a couple of minutes.

Serving

  • Garnish generously with chopped fresh parsley before serving.

Notes

For a lighter twist, substitute heavy cream with coconut milk or a Greek yogurt blend. This dish can be served with fluffy white rice or crusty bread.
