For the Cheesy Scalloped Potatoes

  • 4 large russet potatoes, peeled and thinly sliced Base for the scalloped potatoes.
  • 1 1/2 cups heavy cream Creates a rich sauce.
  • 1 cup whole milk Adds creaminess.
  • 2 tbsp unsalted butter For sautéing.
  • 2 cloves garlic, minced Adds flavor.
  • 2 cups shredded cheddar cheese Main cheese for the sauce.
  • 1/2 cup grated Parmesan cheese Adds depth to the topping.

Preparation

  • Preheat your oven to 375°F (190°C). Butter a 9×13-inch baking dish.

Make the Cheese Sauce

  • In a large saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant.
  • Stir in heavy cream, whole milk, salt, pepper, and nutmeg. Bring to a gentle simmer.
  • Reduce heat to low and gradually stir in shredded cheddar and Parmesan cheeses until melted and smooth.

Layer the Potatoes

  • In the prepared baking dish, layer half of the sliced russet potatoes, overlapping slightly.
  • Pour half of the creamy cheese mixture over the potatoes. Repeat with the remaining potatoes and cheese mixture.
  • Cover tightly with aluminum foil and bake for 45-50 minutes, until fork-tender.
  • Remove foil, sprinkle extra cheese on top, and bake uncovered for an additional 10 minutes until golden and bubbly.
  • Garnish with freshly chopped parsley before serving.

Cook the Steaks

  • Heat olive oil in a large skillet over medium-high heat. Season both sides of each ribeye steak.
  • Place steaks in the hot skillet and cook for about 4-5 minutes on each side for medium-rare.
  • Add butter and rosemary during the last minute, basting for added flavor.

Serve and Enjoy

  • Let the steaks rest for a few minutes, then plate the steaks alongside the cheesy scalloped potatoes.
