Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9-inch springform pan.
  • In a medium bowl, combine chocolate cookie crumbs with melted butter and press this mixture into the bottom of the prepared pan.
  • Bake the crust for 8-10 minutes and then allow it to cool completely.

Making the Mousse

  • In a heatproof bowl, place the chocolate chips and heat 1 cup of heavy whipping cream in a saucepan until it simmers.
  • Carefully pour hot cream over chocolate chips and let it sit for 2 minutes before stirring gently until smooth.
  • Add powdered sugar and vanilla extract, mixing well, then allow to cool slightly.
  • In another bowl, whip the remaining 1/2 cup heavy whipping cream until soft peaks form.
  • Gently fold the whipped cream into the cooled chocolate mixture and pour it over the cooled crust.
  • Refrigerate for at least 4 hours, preferably overnight.

Topping and Serving

  • Whip the heavy whipping cream and powdered sugar until stiff peaks form, then spread it over the mousse layer.
  • Garnish with chocolate shavings or a dusting of cocoa powder before serving.
