  • 1 cup ricotta cheese
  • 1/4 cup shelled pistachios, chopped Lightly toast for enhanced flavor.
  • 2 tablespoons honey Plus extra for drizzling.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • pinch salt
  • 1/4 cup graham cracker crumbs Optional, for rolling.

Preparation

  • In a medium bowl, combine the ricotta cheese, chopped pistachios, honey, vanilla extract, cinnamon, and a pinch of salt. Mix until smooth.
  • Roll the mixture into small bite-sized balls, about 1 inch in diameter.
  • If using, roll each ball in graham cracker crumbs to coat them thoroughly.
  • Place the bites on a tray lined with parchment paper and drizzle extra honey over them. Garnish with chopped pistachios.
  • Refrigerate the bites for at least 30 minutes to firm up.
  • Once chilled, serve to your friends and family.

Notes

Toast the pistachios for enhanced flavor and consider adding a splash of orange zest for a twist.
