Ingredients

Main Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 2 large fresh oranges (zest and juice)
  • 4 cloves garlic, minced
  • 2 tbsp honey
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 1 tsp freshly cracked black pepper

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
  • In a bowl, combine the zest and juice of the oranges, minced garlic, honey, soy sauce, olive oil, and black pepper. Whisk until they create a luscious marinade.
  • Place the chicken thighs in the marinade for at least 30 minutes.

Cooking

  • Arrange the marinated chicken in the prepared baking dish, pouring any leftover marinade over the top.
  • Roast for 25-30 minutes until golden brown and fully cooked.

Serving

  • Serve with rice or steamed vegetables and drizzle with the remaining sauce.

Notes

For a healthier option, substitute honey with low-sugar syrup or agave nectar, and use coconut aminos instead of soy sauce. Serve it over rice or quinoa, paired with vegetables for a balanced meal. Common mistakes to avoid: overbaking the chicken and marinating too long with frozen chicken.
