Preparation

  • Cook the Rotini Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, according to package instructions. Drain and set aside.
  • Sauté the Onions and Bell Pepper: In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sautéing until tender, about 5 minutes. Stir in the minced garlic during the last minute.
  • Add Tomatoes and Sausage: Stir in the can of diced tomatoes and green chilies (Rotel). If adding protein, include cooked ground beef or sausage. Simmer for about 5 minutes.
  • Combine Pasta and Sauce: Fold the cooked rotini into the skillet with the sauce, ensuring a good coat. Add pasta water if the mixture is too thick.
  • Melt the Cheese: Sprinkle shredded cheese over the mixture. Cover and let sit on low heat until cheese is melted.
  • Season and Serve: Taste and season with salt and pepper. Serve hot, garnished with fresh herbs or additional cheese.

Notes
