Preparation

  • Pulse the salmon fillets in a food processor until finely chopped. Alternatively, you can chop the salmon by hand for a chunkier texture.
  • In a large bowl, combine the chopped salmon with breadcrumbs, egg, parsley, green onions, garlic powder, lemon zest, salt, and pepper. Mix thoroughly until well incorporated.
  • Form the salmon mixture into small balls about 1-2 inches in diameter.

Cooking

  • Heat olive oil in a large skillet over medium heat. Allow the oil to reach the right temperature before adding the salmon balls.
  • Cook the salmon balls for 4-5 minutes on each side until they are golden brown and thoroughly cooked.

Making the Sauce

  • While the salmon balls are frying, create the creamy avocado sauce by combining avocado, Greek yogurt, lime juice, minced garlic, salt, pepper, and water in a blender or food processor. Blend until smooth, adjusting water to achieve desired consistency.

Serving

  • Once the salmon balls are finished cooking, remove them from the skillet and serve immediately with the creamy avocado sauce on the side for dipping.
