Instructions
 

Preparation

  • Start by heating the oil in a large skillet or wok over medium-high heat. Allow it to get hot enough for searing but not smoking.
  • When ready, add the thinly sliced beef sirloin and sear until browned on all sides, approximately 3-4 minutes. Remove the seared beef from the pan and set it aside.

Cooking

  • In the same skillet, add the sliced onions, sautéing them until they turn soft and golden brown, usually around 5 minutes.
  • Add the minced garlic, stirring for about 30 seconds until it becomes fragrant.
  • Push the onion and garlic mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until they are just set.
  • Add the cold rice to the skillet, breaking up any clumps and mixing it with the onion, garlic, and eggs.
  • Drizzle the soy sauce and oyster sauce over the rice and stir well. Return the seared beef to the pan, tossing everything together to combine and heat through.
  • Season with salt and pepper to taste and garnish with chopped green onions before serving.

Notes

To elevate flavors, consider marinating your beef in soy sauce, garlic, and a hint of ginger for at least 30 minutes. Customize with additional veggies like bell peppers or peas. Use cold, day-old rice for best results to prevent mushiness.
