  • 2 cups sushi rice The sticky base for the sushi.
  • 4 large shrimp, peeled and deveined Plump shrimp for frying.
  • 1/2 cup tempura batter mix For a light and crispy coating.
  • 1/2 cup panko breadcrumbs For added crunch and texture.
  • 4 sheets nori Essential for wrapping.
  • 1/2 cup cream cheese, softened Adds creamy richness.
  • 1 teaspoon chopped dill For a herbal touch.
  • 1 tablespoon chopped parsley For freshness.
  • 1/4 cup eel sauce Sweet, umami-rich drizzle.
  • 1 tablespoon mayonnaise Adds creaminess; can use spicy mayo.

Instructions
 

Preparation

  • Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and helps the rice be light and fluffy.
  • Cook the rice according to package instructions, then mix in rice vinegar, sugar, and salt while still warm.

Preparing Shrimp

  • Prepare the tempura batter according to package instructions.
  • Coat the shrimp in the batter and roll them in panko breadcrumbs for extra crunch.
  • Heat vegetable oil over medium-high heat, and fry the shrimp for 2-3 minutes until golden brown. Drain on paper towels.

Assembling Sushi

  • On a bamboo sushi mat, place a sheet of nori, shiny side down.
  • Using wet hands, spread a thin layer of sushi rice over the nori, leaving about an inch at the top.
  • Layer cream cheese, crispy shrimp, and any optional vegetables in the center.

Rolling Up

  • Carefully roll the sushi from the bottom using the mat to guide you. Roll tightly, wet the exposed edge with water to seal.

Frying (Optional)

  • Coat the entire roll in tempura batter and panko, and fry for one or two minutes until crispy, if desired.

Serving

  • Slice the roll into bite-sized pieces and arrange them on a serving platter.
  • Drizzle with eel sauce, add a dollop of mayonnaise, and garnish with chopped parsley.

Notes

For best results, use fresh ingredients. Store leftovers tightly wrapped in plastic and refrigerate for up to two days. You can customize fillings as desired.
