Cooking the Beef

  • Start by heating a skillet over medium heat. Add the ground beef and cook until it's nicely browned. Make sure to drain any excess fat.

Mixing in the Ingredients

  • To the skillet, add the can of diced tomatoes with green chilies, along with the garlic powder, onion powder, salt, and pepper. Stir everything together.
  • Reduce the heat to low and incorporate the cottage cheese into the mixture. Stir until everything is smooth and heated through.
  • Gradually sprinkle in the shredded cheese, continuing to stir until it’s completely melted.

Serving

  • Serve the queso warm with a generous bowl of tortilla chips for dipping.

Notes

To elevate your queso, consider adding diced jalapeños or experimenting with different cheese blends. Fresh cilantro or chopped green onions can also be added just before serving.
