For the Bread

  • 1 baguette sliced into pieces Or any crusty bread.
  • 1 clove garlic, halved Imparts aroma when rubbed.

Preparation

  • Cut the ripe avocados in half and remove the pit. Scoop the flesh into a mixing bowl.
  • Add lime juice, salt, and pepper to taste. Smash the avocados to your desired consistency.

Mixing the Toppings

  • In a separate bowl, combine diced cherry tomatoes, red onion, and cilantro.
  • Drizzle with olive oil and sprinkle with salt and pepper. Toss gently to mix.

Toasting the Bread

  • Preheat your oven to 375°F (190°C). Arrange the sliced bread on a baking sheet.
  • Drizzle with olive oil and toast for about 10 minutes until golden and crispy.
  • While warm, rub the cut side of the garlic clove over the toasted bread.

Assembling the Bruschetta

  • Spread smashed avocado on each slice of toasted bread.
  • Top with the tomato mixture, garnish with cilantro, and serve immediately.

Notes

To prevent browning, sprinkle more lime juice on the avocados. Experiment with additional toppings and always toast the bread just before serving.
