  • 10 ounces frozen chopped spinach, thawed and very well drained Ensure it’s well drained to avoid excess moisture.
  • 1/3 cup crumbled feta cheese For a tangy flavor.
  • 1/3 cup diced sweet onion Adds sweetness to the dish.
  • 1/4 cup melted butter Provides richness.
  • 2 tablespoons freshly grated Parmesan cheese For extra cheesiness.
  • 1/8 teaspoon black pepper To taste.
  • 1/8 teaspoon garlic powder Enhances flavor.
  • A dash nutmeg For a warm spice note.

Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a 1 1/2-quart (9-inch square) casserole dish.
  • In a large bowl, mix together the beaten eggs, cottage cheese, drained spinach, crumbled feta, diced sweet onion, melted butter, grated Parmesan, black pepper, garlic powder, and a dash of nutmeg until well combined.

Baking

  • Transfer the mixture into the prepared casserole dish.
  • Bake uncovered for about 40-45 minutes, or until the center is nearly set.
  • Allow to cool for 5-10 minutes before slicing and serving warm.

Notes

For extra flavor, add chopped sun-dried tomatoes or bell peppers. Top with extra feta or Parmesan before baking for a cheesy crust. Store leftovers in an airtight container for up to three days, or freeze before baking for longer storage.
