Ingredients

For the Cake

  • 1 box white cake mix plus ingredients listed on the box
  • 1/2 cup mashed strawberries ripe, fragrant, and bursting with flavor

For the Cheesecake Layer

  • 16 oz cream cheese softened to velvety perfection
  • 1/2 cup granulated sugar adding a sweet kiss
  • 2 pieces eggs fresh and farm-raised for richness
  • 1 tsp vanilla extract a fragrant whisper of warmth

For the Whipped Cream and Topping

  • 1 1/2 cups heavy cream for that creamy texture
  • 1/2 cup powdered sugar ensuring just the right amount of sweetness
  • 1 cup diced strawberries adding jewels of flavor
  • as needed pieces whole strawberries for garnish

Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease and line your cake pans with parchment paper for easy removal later.
  • In a mixing bowl, prepare the cake batter according to the instructions on the box. Gently fold in the mashed strawberries. Bake as directed, then let your cake layers cool completely on a wire rack.
  • While the cake layers cool, beat the cream cheese and granulated sugar together in another bowl until smooth and creamy. Add the eggs and vanilla extract, mixing just until incorporated.
  • Pour the cheesecake mixture into a greased pan and bake for 35-40 minutes until set but slightly jiggly in the middle. Cool completely.

Whipping and Assembly

  • Whip the heavy cream with the powdered sugar and remaining vanilla extract until stiff peaks form.
  • Layer a cake layer, then spread a generous scoop of cheesecake, followed by a layer of diced strawberries and a swirl of whipped cream. Repeat the layering.
  • Frost the entire cake with the remaining whipped cream.
  • Garnish with whole strawberries on top. Chill the cake in the refrigerator for at least an hour before serving.

Notes

Allow your cakes to cool completely before assembly to prevent a melted mess. Use fresh, ripe strawberries for maximum flavor.
