For the strawberry topping

Preparation

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until evenly moistened.
  • Press the mixture into the bottom of a greased 9×13-inch baking pan to form an even crust layer.

Making the cheesecake filling

  • In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract, sour cream, and flour. Mix until the batter is perfectly smooth.

Baking the bars

  • Pour the cheesecake filling over the prepared crust, spreading it evenly.
  • Bake for 30-35 minutes or until the center has set and the edges are lightly golden.
  • Allow to cool in the pan to room temperature, then refrigerate for at least 2 hours to let the cheesecake firm up.

Preparing the strawberry topping

  • Combine diced strawberries, sugar, and lemon juice in a small saucepan.
  • Cook over medium heat for 5-7 minutes until strawberries release juices and mixture thickens slightly.
  • Remove from heat and let it cool.

Serving

  • Once the cheesecake bars are fully chilled, spoon the strawberry topping evenly over the top.
