Macaron Filling Ingredients

  • 1/2 cup unsalted butter, softened Creamy base of the filling.
  • 1.5 cups powdered sugar Sweetness that complements the strawberries.
  • 1/4 cup strawberry jam Adds a fresh, fruity essence.

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  • Sift together the powdered sugar and almond flour in a medium bowl.
  • In a separate bowl, beat the egg whites and cream of tartar at medium speed until soft peaks form.
  • Gradually add in granulated sugar, beating until stiff peaks form and the mixture is glossy.
  • Incorporate vanilla extract and optional pink food coloring.
  • Gently fold the sifted almond flour and powdered sugar mixture into the egg whites until smooth.
  • Transfer the batter into a piping bag fitted with a round tip and pipe small circles onto prepared baking sheets.
  • Gently tap the baking sheets on the counter to release air bubbles.
  • Let macarons rest for 30-60 minutes at room temperature until a skin forms.

Baking

  • Bake in the preheated oven for 15-18 minutes until puffed and formed a foot.
  • Allow macarons to cool completely on baking sheets.

Filling Assembly

  • Beat softened unsalted butter with powdered sugar until fluffy.
  • Mix in strawberry jam until combined.
  • Pipe the filling onto the flat side of half the macarons and sandwich with the other half.

Notes

Ensure bowls and beaters are clean for egg whites. Be patient during resting time to prevent cracking. Sift dry ingredients for a smooth batter.
