Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  • Add the eggs to the butter-sugar mixture one at a time, beating well after each addition.
  • Pour in the vanilla extract, lemon zest, and strawberry puree. Mix until just combined.
  • Gradually add the dry mixture to the wet, alternating with the buttermilk. Start and end with the dry ingredients. Mix until incorporated.

Baking

  • Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until golden brown.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring to wire racks to cool completely.

Filling and frosting

  • For the strawberry filling, combine diced strawberries, sugar, and lemon juice in a small bowl. Stir and let sit for 15 minutes.
  • For the lemon buttercream frosting, beat the softened butter until creamy. Gradually add powdered sugar, lemon juice, lemon zest, and salt. Beat until smooth.
  • To assemble, place one cake layer on a serving plate, spread a layer of strawberry filling, then a layer of frosting.
  • Add the second cake layer on top, then frost the top and sides with the remaining buttercream frosting.
  • Garnish with fresh strawberries or lemon zest if desired.
