Preparation

  • Preheat the oven to 350°F (175°C).
  • Blind-bake the pre-made tart crust for 10-12 minutes until lightly golden. Allow it to cool completely on a wire rack.
  • In a large mixing bowl, combine 4 large egg whites, 1 cup granulated sugar, and 1 tsp vanilla extract.
  • Beat the mixture with an electric mixer on medium speed until it thickens, then increase to high until stiff peaks form.

Assembly

  • Spoon or pipe the meringue onto the cooled tart crust, creating peaks and swirls.
  • Bake the tart in the preheated oven for 15-20 minutes until the meringue turns golden brown.
  • Remove from the oven and allow the tart to cool completely to room temperature.
  • Top the meringue with 1 cup of sliced fresh strawberries and dust with 1 tbsp powdered sugar. Add fresh mint leaves if desired.
