Instructions
 

Preparation of the crust

  • Press this crumb mixture into the bottom of a springform pan to create a solid base.
  • Chill in the fridge for about 15 minutes to firm it up.

Making the cream cheese layer

  • In a separate mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
  • In another bowl, whip the heavy cream to stiff peaks and gently fold it into the cream cheese mixture to maintain its lightness.
  • Spread the cream cheese layer evenly over the crust and let it refrigerate.

Preparing the strawberry mousse

  • In a medium saucepan over medium heat, combine the chopped strawberries, granulated sugar, and lemon juice. Simmer for about 6-8 minutes until the strawberries are soft.
  • Blend the mixture into a smooth puree and let it cool slightly.
  • Bloom the gelatin in a small bowl with water for about 5 minutes, then gently heat until dissolved. Stir it into the cooled strawberry puree.
  • In a clean bowl, whip the chilled heavy cream with powdered sugar to stiff peaks. Carefully fold this whipped cream into the cooled strawberry mixture.

Assembly of the cake

  • Pour the velvety mousse over the cream cheese layer, smoothing the top with a spatula.
  • Refrigerate for at least 4 hours or overnight to let it set completely.
