Preparation of Strawberry Base

  • In a medium-sized bowl, combine the freshly sliced strawberries with the granulated sugar and lemon juice. Stir gently to coat the strawberries evenly and allow them to sit for about 10 to 15 minutes.
  • After the strawberries have softened, either mash them with a fork for a chunky texture or blend them for a smoother consistency. Set the strawberry mixture aside.

Preparation of Ice Cream Base

  • In a separate large bowl, whisk together the heavy cream, whole milk, granulated sugar, and vanilla extract until the sugar has completely dissolved, creating a rich and creamy mixture.
  • Add the strawberry puree reserved from the first step into the cream mixture. Stir gently until everything is well combined.

Churning the Ice Cream

  • Pour the entire mixture into your ice cream maker and follow the manufacturer's instructions for churning, typically about 20 to 30 minutes, until it reaches a soft-serve consistency.

Freezing

  • Once the ice cream has thickened, transfer it into an airtight container. Freeze for at least 4 hours or until firm.
