Ingredients
  

For the Crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs Aromatic, buttery crumbs for a crunchy crust.
  • 0.25 cups 1/4 cup granulated sugar Enhances the flavor of the crust.
  • 0.5 cups 1/2 cup unsalted butter, melted Brings the crust together.

For the Cheesecake Filling

  • 3 packages 3 packages (8 oz each) cream cheese, softened The heart of the cheesecake.
  • 1 cups 1 cup granulated sugar Balances the tartness of strawberries.
  • 1 teaspoon 1 teaspoon vanilla extract Enhances the creaminess.
  • 3 large 3 large eggs Binds the ingredients together.
  • 1 cups 1 cup sour cream Adds tangy richness.

For the Strawberry Swirl

  • 0.5 cups 1/2 cup strawberry puree Fresh or frozen strawberries blended.
  • 2 tablespoons 2 tablespoons sugar (for the strawberry swirl) Enhances the sweetness of strawberries.
  • 1 teaspoon 1 teaspoon lemon juice Brightens the flavors.

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined.
  • Press the mixture into the bottom of a springform pan. Bake for 10 minutes and let cool.
  • In a large mixing bowl, beat softened cream cheese until smooth. Gradually mix in sugar and vanilla extract.
  • Add eggs one at a time, mixing well after each addition. Pour in sour cream and mix until smooth.
  • In another bowl, combine strawberry puree, sugar, and lemon juice.
  • Pour cream cheese mixture over cooled crust, dollop strawberry puree and swirl with a toothpick.

Baking

  • Bake cheesecake for 55-60 minutes until the center is slightly jiggly. Turn off the oven and let it cool in the oven for 1 hour.
  • Cool completely at room temperature and then refrigerate for at least 4 hours or overnight.

Serving

  • Slice and serve with whipped cream or fresh strawberries.

Notes

Use fresh strawberries for the best puree. Allow chilling overnight for improved flavor and texture. Use a warm knife for clean slices.
