  • 4 slices slices of your favorite bread (sourdough or whole wheat)
  • 1/2 cup creamy ricotta cheese adds smooth texture and richness

  • 1 cup chopped fresh spinach adds color and nutritional benefits
  • 2 tablespoons softened butter to achieve a golden, crispy exterior
  • 1 cup shredded mozzarella cheese melts beautifully
  • 1 tablespoon olive oil optional, for enhanced grilling

Instructions
 

Preparation

  • In a small bowl, combine the ricotta cheese, chopped sun-dried tomatoes, and fresh spinach. Mix until well combined. Season with salt and pepper to taste.

Assembly

  • Spread a generous layer of the ricotta mixture on one slice of bread. Top it off with a heap of shredded mozzarella cheese, then place another slice of bread on top.

Cooking

  • Heat a skillet or griddle over medium heat. Spread softened butter on the outside of both slices of bread. Carefully place the sandwiches on the skillet.
  • Cook for 3 to 5 minutes on each side or until golden brown and crispy, and the cheese is melted.

Serving

  • Once the sandwiches are crispy and golden, remove them from the pan and cut them in half. Serve hot.

Notes

For an extra gourmet touch, consider adding Italian seasoning to the ricotta mixture or a bit of garlic powder. Grill your sandwich with olive oil for added richness. To spice it up, add sliced jalapeƱos or a drizzle of balsamic glaze after grilling.
