Sun Dried Tomato Spinach and Ricotta Grilled Cheese

Ingredients
  

Cheese Filling

  • 2 oz. shredded unsmoked provolone cheese Creamy and slightly nutty, this cheese provides a delicious base.
  • 1/3 cup ricotta cheese Rich and fluffy, adds wonderful creaminess.
  • 3 Tbsp finely shredded parmesan cheese For a sharp and salty contrast.
  • 1 small garlic clove, minced Elevates the overall flavor profile.
  • Salt and freshly ground black pepper, to taste Essential seasonings.

Vegetables

  • 3 cups fresh spinach, slightly packed Adds a delightful green burst.
  • 2 Tbsp chopped fresh basil Gives a fresh lift.
  • 3 Tbsp minced sun dried tomatoes Packed with concentrated flavor.

Bread and Butter

  • 4 slices Sara Lee Artesano Golden Wheat Bread Soft and slightly sweet.
  • 8 tsp butter, softened For a golden, crispy exterior.

Instructions
 

Preparation

  • In a mixing bowl, combine the provolone, ricotta, parmesan, and minced garlic. Season with salt and pepper to taste and set aside.
  • In a medium pot, bring ½ inch of water to a boil. Insert a steamer basket and add the fresh spinach. Cover and let it steam until just wilted, about 1-2 minutes.
  • Transfer the steamed spinach to paper towels, folding them over the spinach to absorb any excess moisture.

Assembly

  • Butter one side of each slice of bread with 1 tsp of butter. On two slices, layer the steamed spinach and chopped basil evenly.
  • Spoon the prepared cheese mixture over the spinach and gently press in the sun-dried tomatoes. Top with the remaining slices of bread, buttered side up.

Cooking

  • Heat a large non-stick skillet over medium-low heat. Carefully place the sandwiches in the skillet, cover, and cook until the bottom is golden brown, about 4-6 minutes.
  • Flip the sandwiches and continue cooking until the other side is golden brown and the cheese has melted, about 2 more minutes.

Notes

Use high-quality bread for better texture and flavor. Experiment with herbs like oregano or thyme, or add red pepper flakes for heat. Don't rush; cook on low heat for perfect results.
