Preparation

  • In a saucepan over medium heat, combine the finely chopped pineapple, 1/2 cup water, white vinegar, honey, soy sauce, minced ginger, and minced garlic.
  • Bring the mixture to a gentle simmer, allowing the sweet aroma to fill your kitchen.
  • Reduce the heat and let the sauce simmer for about 10 minutes, until the pineapple pieces are tender and bursting with flavor.
  • In a small bowl, mix the cornstarch with 2 tablespoons of water to create a smooth slurry. Stir this slurry into the simmering sauce.
  • Add the red chili flakes and a pinch of salt to the mixture, adjusting the heat level to your preference. Stir well.
  • Continue to simmer for another 5 minutes, or until the sauce thickens to a glossy glaze.
  • Once finished, remove the saucepan from heat and let the sauce cool slightly. It will thicken further as it cools.

Notes

For the best results, use fresh pineapple. If you prefer a smoother texture, consider blending the sauce after cooking. Experiment with a splash of orange juice or zest for added depth. Adjust the amount of red chili flakes based on your heat preference.
