Instructions

Preparation

  • In a mixing bowl, combine the softened cream cheese, 2 tbsp of sugar, and 1/2 tsp of vanilla extract. Beat until the mixture is smooth and creamy.
  • Carefully dice the fresh strawberries and fold them gently into the cream cheese mixture until well combined.

Cooking

  • Take one tortilla and spread half of the strawberry cream cheese mixture over one side.
  • Heat a non-stick pan on medium-high heat and add 1 tsp of butter, allowing it to melt.
  • Place the tortilla cream cheese side up in the pan. Take another tortilla, spread 1 tsp of butter on one side, and lay it on top of the cream cheese filling, butter side facing up.
  • Cook the quesadilla for 2-3 minutes on each side, or until golden and crispy. Repeat this process for the second quesadilla.
  • Mix together 1 tsp of sugar and 1/2 tsp of cinnamon, and sprinkle this mix over the cooked quesadillas for an additional sweet touch.
  • Remove the quesadillas from the pan and allow them to cool for 2 minutes before slicing them into wedges.
  • Serve with strawberry sauce for dipping.

Notes

Use fresh strawberries for the best flavor; if they’re out of season, frozen strawberries can be a substitute. For an extra layer of flavor, consider adding a pinch of lemon zest to the cream cheese mixture. You can experiment with different fillings too—try adding a splash of chocolate or a drizzle of caramel for a fun twist!
