Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  • Dip each zucchini fry into the beaten eggs, then coat in the Parmesan mixture.

  • Mist the fries gently with olive oil spray.

Cooking

  • Bake for 20-25 minutes, flipping halfway through.
  • Remove from the oven, let cool slightly before serving.
