For the Shrimp

For the Rice Stack

Instructions
 

Preparation

  • In a medium bowl, combine the teriyaki sauce, soy sauce, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes. Stir well and add the shrimp, ensuring they're coated. Let them marinate for at least 15 minutes.

Cooking

  • Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, reduce the heat slightly and add sesame oil. Then, add the chopped green onions, diced red bell pepper, and fresh pineapple. Sauté for about 2-3 minutes, allowing the vegetables to soften and the pineapple to caramelize slightly.
  • Add the cooked rice to the skillet. Break up any lumps with a spatula and stir in the soy sauce, rice vinegar, garlic powder, salt, and pepper. Sauté for another 2-3 minutes, ensuring everything is well combined and heated through.
  • To form the rice stacks, use a ring mold or a small bowl. Place a layer of rice at the bottom, pressing down gently. Top it with a generous portion of the cooked shrimp. Remove the mold carefully to reveal your beautifully formed stack.

Serving

  • Garnish with freshly chopped cilantro, a sprinkle of sesame seeds, and a squeeze of lime juice. Serve immediately and enjoy the delightful flavors!

Notes

For an even more vibrant dish, consider adding other vegetables such as snap peas or carrots to the sauté mixture. Marinating the shrimp longer than 15 minutes will deepen the flavors, so feel free to prepare it in advance. If you'd like to add a bit of crunch, toasted sesame seeds make an excellent topping. A drizzle of Sriracha or your favorite hot sauce can elevate the dish further.
