Ingredients
  

For the shrimp marinade

  • 1/4 cup teriyaki sauce rich and glossy, bringing an umami depth
  • 1 tbsp soy sauce salty and robust, enhancing overall taste

  • 1 tsp sesame oil providing a nutty aroma
  • 1 clove garlic, minced aromatic with a pungent kick
  • 1/2 lb shrimp, peeled & deveined tender morsels that soak up flavors

For the rice stack

  • 1 cup cooked rice acting as the foundation of the stack
  • 1/2 cup diced pineapple sweet and juicy, introducing a refreshing burst
  • 1/4 cup diced bell peppers bringing vibrant hues
  • 1 tbsp soy sauce adding further savory notes
  • 1 tsp sesame oil reinforcing nutty richness
  • 1 tbsp chopped green onions fresh and sharp
  • 1/4 cup mashed avocado (optional) creamy, offering a smooth contrast

Instructions
 

Preparation

  • Combine teriyaki sauce, soy sauce, honey, sesame oil, and minced garlic in a mixing bowl. Toss in the shrimp to coat and let marinate for 15 minutes.

Cooking

  • Heat a non-stick skillet over medium-high heat and sauté marinated shrimp until they turn pink and caramelized, about 2-3 minutes on each side.
  • Add diced pineapple and bell peppers to the skillet, stir-fry for about 2 minutes until pineapple caramelizes slightly.
  • Mix in cooked rice, additional soy sauce, and sesame oil, stirring until combined and heated through.

Stacking

  • Use a ring mold to create stacks by spooning the fried rice mixture into the mold, pressing down firmly.
  • Layer caramelized shrimp on top and optionally add mashed avocado.
  • Lift off the ring mold carefully to reveal the stack, garnish with sesame seeds and green onions.

Notes

Marinate shrimp longer than 15 minutes if possible for enhanced flavor. Be careful not to overcook shrimp to avoid a rubbery texture. Pressing rice into a ring mold will improve the presentation.
