Dressing Ingredients

  • 2 tbsp lime juice, freshly squeezed for a zesty kick
  • 1 tbsp honey or maple syrup natural sweetness
  • 1 tbsp sesame oil nutty and fragrant
  • Sriracha to taste for an extra kick

Instructions
 

Cooking the Chicken

  • Begin by heating a splash of oil in a skillet over medium heat. Once hot, carefully add the chicken breasts. Sear each side for about 6-7 minutes until they achieve a beautiful golden brown crust and are fully cooked through.
  • When the chicken is done, remove it from the skillet and let it rest on a cutting board for about 5 minutes to allow the juices to redistribute.
  • After resting, slice the chicken into bite-sized pieces.

Preparing the Vegetables

  • Chop the bell peppers into thin strips, slice the cucumbers, and julienne the carrots into elegant matchsticks.

Making the Dressing

  • In a mixing bowl, combine the creamy peanut butter, low-sodium soy sauce, freshly squeezed lime juice, honey (or maple syrup), sesame oil, and Sriracha. Whisk together until the mixture is smooth and creamy.

Combining the Salad

  • In a large bowl, toss together the sliced chicken and prepared vegetables.
